This evening I made one of our new favorites: Mexican Lasagna. It’s an enchilada/lasagna type meal using tortillas to layer ingredients.
I began by browning about 1/2 pound of ground turkey. I strir together the cooked turkey and a can of black beans in a bowl with about 1/2 a packet of taco seasoning.
Preheat the oven to 350 degrees and spray PAM in a glass baking pan. I use the bread loaf size because there are only two of us.
Next I put down a layer of tortillas on the bottom of the pan. I use my homemade tortillas. Then I spread a layer of refried beans over the tortillas. Then I sprinkle a layer of cheese (Cheddar/Jack mix) over the beans followed by a layer of the mean and black bean mixture (As pictured – sometimes I use leftover CrockPot Taco Soup instead of meat and black bean mixture). Repeat the layering ending with the bean and meat mixture. Top with a layer of cheese and then place in the oven for about 30 minutes. Larger pans might need more time. Serve with sour cream and salsa.
