On Friday night we joined a few other groups and played a few hours of Ice Hockey in our tennis shoes using brooms and playground balls. We had such a great time. Later, we all returned to our building and spent the night playing Giant Jenga and Sardines. We also worked in some Pizza, candy, soda and Wii games. There was no sleep until 9:30 the next morning when I dragged myself to bed and slept for about 3 hours before rising to join some friends for a late lunch and go to Special Friend’s birthday party. What a jam packed weekend! So, summer begins!

Today was a disappointment. It’s hard not getting discouraged when I’m holding at 9-10 pounds lost week after week. Monday I go to get fitted for my Maid of Honor dress and as much as the dress is pretty, the situation ISN’T going to be!
I guess I should smile that I’m maintaining despite eating at Cheese Burger in Paradise this week AND having 4 alcoholic beverages within the last 9 days.
I’ve been so exhausted lately that I’ve not been visiting any fellow bloggers OR keeping you all up to date on what’s happening in the ‘Burbs!
I still need to share some photos about Broomball but first I want to tell you about the Rain Gutter Regatta! Last night Jacob and I won our first heat but lost in the second heat. I guess it’s a good thing because then we didn’t have to take on our friends in the final round.
Rain Gutter Regatta is apparently a Boy Scout tradition however I remember having our own kind with paper boats and the GIANT floods in our backyard. I was very excited to get to assemble a boat kit and decorate the sail and boat as I wished. When it was our turn we donned a life vest, blew wind into our sail through a straw and raced the boat to one end where my husband took over the life vest and the “wind” portion of the race. It was all pretty exciting!
This all took place at Cheeseburger in Paradise where the races will continue for the next 2 weeks. Go get your race on!
This week I have yet ANOTHER fantastically easy week. Barely any cooking going on.

Wednesday: Chili Cheese Etoufee with Chicken (Homemade Copy Cat Recipe from one of our favorite recipes)

Friday: Dinner @ the baseball game
Saturday: Dinner @ Cinco De Mayo Party
Have you ever had one of those days where you’re working for almost 24 hours straight, you have friends coming to stay at your house from out of town, you just loaded up your freezer with frozen meat that was on sale and your power gets turned off? And oh yeah, it’s Friday.
Tonight at the Non Profit we have a lot of fun planned! We’re playing Broomball! Never heard of it?
Broomball is an actual sport with leagues. It’s essentially hockey on ice with brooms and a small rubber ball about the size of a softball. Doesn’t sound safe? Well, you get to play on the ice in your tennis shoes! I can’t wait to share photographs with all of you! This is one situation where I’ll turn in my flip flops for lace up shoes…even though it is 80 degrees outside.
Prepare yourself interenets, I will have no sleep tonight. I’ve promised a group of kids that we do not have to sleep at all. I’m anticipating lots of screaming in the dark hallways, hide n’ seek, sardines, basketball in the gym (I passed on buying a new PINK basketball because I was concerned that the boys wouldn’t use it), late night pizza, Xbox, Wii and impromptu pillow fights! Oh, and Giant Jenga. More on that tomorrow, or whenever I wake up…
The day before we abandoned the Midwest for the supposedly sunny Grand Canyon, all four of us we hustling through our days at work, trying to get as much done as possible. Coincidently, this is the exact week that life at the Non Profit got super busy. For dinner, we carb loaded at Olive Garden. Really we just wanted to have an excuse to eat out and it was way to early to be carbo loading.
We all packed our bags, weighed them, eliminated items and returned home to retrieve forgotten items. On day Zero, we boarded the plane early in the morning for the 4 hour flight to Las Vegas. Thanks to Special Friend for driving us both ways.
Malia met us at baggage claim and we were all pumped for the trip. We drove down the Las Vegas strip so that Camp Guy, a Vegas first timer, could see everything. We stopped for the typical photograph in front of the Las Vegas sign.
The whole day consisted of numerous stops including; gas, supply shopping at REI, two stops for lunch (one at Jack In The Box and another at El Pollo Loco), a stop at CVS for a memory card for the camera, a photography stop at the Hoover Dam, another gas station stop for bathroom and snacks, another stop at a gas station for bathroom and gas, a failed stop at a gas station for the bathroom but they didn’t have one, a stop at a fast food place for bathroom and finally a stop at the Grand Canyon National Park sign for a photo. Once we were in the park we had another 5-7 stops for various reasons.
That night we finished dinner at about 10pm and the temperature had dropped to 19 degrees and we’d faced snow flurries throughout the day. Our tents were not set up yet, we still needed to repack our backpacks and we needed to find a source of water. Lucky for us there was one more room available and they gave us a small discount. We slept
well better than we would have in a tent and had one last shower that we hadn’t anticipated.
We made it back from the Grand Canyon!

Yeah, it’s okay to be jealous, I have a pretty easy week of cooking ahead of me.
This week will my menu will be very different from the past few weeks. We’re on our way to the Grand Canyon for a 3 day hike into and out of this beautiful creation. Here we go!
Monday – Chicken Tostadas
Tuesday – Leftovers – Fridge clean out
Wednesday – Meal in a restaurant in Arizona or Nevada
Thursday – Dehydrated meal, goldfish crackers, power bars, cliff bars, codeine, asprin
Friday – Dehydrated meals, goldfish crackers, power bars, cliff bars, codeine, asprin
Saturday – Dehydrated meals, codeine, asprin, icy hot and a Success Meal in a Restaurant
Sunday – Airport Food
How in the world am I going to fit this sleeping bag and all of this er, HALF of this stuff (husband will carry half…I hope) into my backpacking backpack? Yes, it already looks ful…BECAUSE IT IS!
